Recipe: SPAM Cordon Bleu 5 oz can Chunk white chicken in water, drained and flaked 2 12oz cans SPAM lite 1/2 5oz can reduced-fat sour cream and onion pringles 10oz can chicken gravy 2 slices low-fat Swiss cheese (2 oz total) 1 Tbsp chopped fresh parsley 1 egg white 5oz can evaporated milk 1/2 tsp poultry seasoning Fire up your grill to medium-low. In a medium bowl, chop up the cheese. Mix in the chicken and parsley. Cut each block of SPAM in half lengthwise to create 4 slabs. Cut a big pocket in each slab. Stuff 1/4 of the chicken mixture in each. In a shallow bowl, mix the egg white and 1/2 the milk. Dump the Pringles into a big ziplock bag. Seal the bag and beat the hell out of it until the Pringles are crushed. Pour the Pringles into another shallow bowl. Dredge the SPAM in the milk mixture and then the Pringles. Put it in a grill basket and coat with cooking spray. In a pot, heat the gravy, poultry seasoning, and remaining milk over medium-low until heated through. (Do this on the grill if your pot's handle isn't plastic and if you don't mind flames discoloring the pot's bottom. Otherwise, use the burner attached to your grill, or use the stove.) Put the grill basket on the grill and close the lid (with the vents open). Grill, turning once, for 6 to 8 minutes per side, or until the outside is crunchy brown and the cheese is melted.
