Recipe: Mac Nut Brittle 1 Cups Sugar 1/2 Cups Light Corn Syrup 1 1/2 Cups Macadamia Nuts (or other nut) 1 Dash Salt (optional) 1 Tb Butter 1 1/2 Tsp Baking Soda 1 Tsp Vanilla In a microwave bowl, mix the sugar, syrup, nuts and salt. Cook in Microwave on High for 3 minutes. Remove and stir. Cook in microwave on high for 3 minutes. Remove and stir. Cook in microwave for last time for 2 minutes. Remove bowl from microwave, mix in the remaining ingredients until light and foamy. Don't overstir. Quickly spread as thin as possible on a greased baking sheet. Wait for it to cool and then break into pieces.
