Recipe: Best Apple Pie you have Eaten 1 Pie Crust (top and Bottom) 4 Cups Zucchini, peeled, cored and thinly slice 1 1/2 Cups Sugar 1/4 Cups Flour 1 1/2 Tsp Cinnamon 1/3 Tsp Salt 1/4 Cups Lemon Juice 2 Eggs Make pie crusts, place bottom in pan and set aside. Mix sugar, flour, Cinnamon and salt together. Dredge zucchini in mixture. Then lace in bottom crust. When done, beat together eggs and lemon juice. Pour over filling. Place top crust and bake 375 degrees until center of pie is bubbling.
