Recipe: Monterey Chicken 4 Boneless skinless chicken breast Lemon pepper seasoning 8 strips bacon -- cooked 1/4 cup Monterey jack cheese -- shredded 4 tablespoons barbecue sauce 1/4 cup tomato -- diced 1/4 cup green onion -- chopped Sprinkle each side of chicken breast with Lemon Pepper. Cook chicken in pan or grill pan. When the chicken is done (but still in the pan), spread on 1 tbls barbeque sauce on each piece. Place on two pieces of bacon, some cheese, then tomato, green onion and top with a little more cheese. Cover and heat until cheese melts a bit.
